Delicious Ice Cream Sandwiches
Ingredients
4 bananas large and very ripe
450 g fresh strawberries
chocolate ruffle biscuit (used as the sandwich case)
Method
Peel the bananas and cut them into slices, then slice the strawberries.
Line a tray with baking paper and arrange the fruits. Place in the freezer and freeze for 2 hours or until fully frozen.
When the fruits are frozen, place them into your blender. Process until the mixture is creamy and smooth, scraping down the edges of the bowl as needed. It takes a while to reach the right consistency - don't worry, it's normal .
Serve immediately for a soft-serve consistency. If you prefer a harder ice cream-like consistency, transfer mixture into a loaf pan and freeze for 3-4 hours.
Scoop enough ice cream onto the chocolate ruffle biscuit and sandwiched it with another.
